The taste of Sauvignon Blanc is defined by its striking personality, with its hallmarks being a vibrant acidity and a powerful aroma. Its characteristics continue to mature over a longer period, typically one or two years after the harvest. However, its true essence is revealed after several years of aging in specialized barrels and bottles, as the palate and bouquet evolve to evoke the lush, sweet notes of yellow melon.
